Does Yun Jin need HP?
Yun Jin is not a shielder. Though her Elemental Skill creates a temporary shield, it only lasts for the duration of holding her Skill, and its purpose is to allow Yun Jin to counter (parry) incoming attacks without taking damage. Building HP is not recommended and does not benefit her kit in any way.
However, Yun Jin's Skill and Burst scales with DEF, so they won't benefit from it. Unfortunately, she also has a low base ATK, so building her on ATK isn't that good either. If players opt to use her as a Sub-DPS with DEF/Geo/Crit, they'll soon find that her damage dealing is really slow.
Yun Jin is a great Geo Support or Elemental Burst damage character. She can provide bonus damage for physical damage characters like Eula or characters that rely heavily on normal attacks like Yoimiya.
Similar to Beidou's Tidecaller ability, once Yun Jin unlocks her “True to Oneself” passive, she can use this skill to parry enemy strikes and immediately deal a fully charged version of the attack right off the bat.

You want around 160%-200% for her energy recharge. CRIT hits have a 60% chance to generate a small amount of Elemental Particles, which will regenerate 6 Energy for the character.
Four-pieces of Husk of Opulent Dreams is Yun Jin's best Artifact set for most teams and scenarios. The 30 percent DEF boost from the two-piece effect substantially increases the damage from Yun Jin's Skill and the buffs provided by her Burst.
With one fully leveled 5-star DEF clock you should be fine. If you're just starting it's too soon to worry about sub-stats and/or artifacts set, specially since Yun Jin's set for DEF (Husk of Oppulent Dreams) is obtained in a domain were you have to fight those corrosion doggos, which are hard to beat for me.
In co-op. Yun Jin is a great character to use in co-op play, as her Elemental Burst's buff is on a 30 hit quota counted individually for each character on the team. More characters attacking at once means more triggers, letting Yun Jin's buff realize its full 120 hit quota.
